Ingredients
Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.
Directions
- Preheat flat top to 400-450°F.
- In a bowl combine sweet potatoes with oil, smoked paprika, cumin, and salt and pepper to taste.
- Oil flat top with cooking spray. In one section place seasoned sweet potatoes. In another section lay out strips of bacon. Close lid, or cover sweet potatoes with foil tray if flat top doesn’t have a lid, for 5 minutes.
- Stir potatoes and flip bacon. Remove bacon once crisp and set aside. Re-cover sweet potatoes to continue to cook for 5 minutes.
- Uncover sweet potatoes and add black beans and water. Stir to combine. Place pulled pork on a separate section of the flat top. Re-cover sweet potatoes or close lid for 5 additional minutes to continue to cook.
- Uncover flat top. Pork should be beginning to crisp and reheated to a temperature of 165°F and potatoes should be tender. Remove sweet potatoes and place into desired serving platter. Top with pulled pork.
- On hot flat top, fry eggs. Cook eggs until yolk and whites are firm and the internal temperatures reaches 160 degrees F. Place on top of pulled pork. Crumble bacon over eggs. Finish with scallions and salsa if desired.
