Directions
PREPARATION

Rub pork shoulder with olive oil and all seasonings.

Place in a covered Dutch oven or tightly wrapped roasting pan.

Roast 3–4 hours, until fork-tender. USDA Safe Temp: Cook pork to 145°F, then rest 3 minutes. (For shredding, internal temp typically reaches 195–205°F.)

Rest 15 minutes, then shred with forks.

Toss lightly with pan juices or BBQ sauce if desired.
Assembly

Spread tortilla chips across a large board or platter.

Pile pulled pork in the center.

Add bowls of cheese, guacamole, sour cream, and pico.

Scatter jalapeños, pickled onions, and cilantro around the board.
