Mediterranean Pork Zucchini Boats

Ingredients

Directions
- In a skillet over medium-high heat, spray pan with high-heat cooking spray. Add pork and cook, breaking up, until no longer pink. Add tomatoes, garlic, lemon juice, coriander and cumin. Continue to cook until tomatoes have softened and mixture is fragrant. Remove from heat and fold in feta cheese, dill and lemon zest. Season with salt and pepper as desired. Set aside to cool.
- Slice zucchini in half lengthwise. Use a spoon to remove the seeds, creating a hollow center. Stuff each zucchini half with roughly ½ cup of pork mixture, pressing to pack into center. Top each with about 2 tablespoons of panko breadcrumbs.
- Preheat air fryer to 400° F for 3-5 minutes. Spray tops of stuffed zucchinis with cooking spray. Cook 4 at a time to not overcrowd the air fryer basket until filling reaches an internal temperature of 160° F and zucchinis have softened, about 12-15 minutes. Repeat for remaining boats. Could also be baked in a 400° F oven for about 20-25 minutes, until filling reaches an internal temperature of 160° F.
- Garnish with extra dill and serve warm.
NOTE: Can be made into bite-size portions by cutting each boat into quarters after cooking.
Serve with orzo or rice if desired.
