- Place pork chunks into a slow cooker. Add vinegar, oil, garlic, honey, Italian seasoning, Calabrian chilies, fennel seed, salt, and pepper. Toss until evenly coated with seasonings and add water.
- Cover and cook on high for 2.5-3 hours or low for 5-6 hours. Pork should be fork tender and reach an internal temperature of 145°F followed by a 3-minute rest.

- Keep pork in the slow cooker, and carefully shred pork using two forks. Combine with juices in slow cooker until evenly mixed. Set aside.
- Evenly distribute warm pulled pork over chips. Top with shavings of asiago cheese then arugula. Sprinkle with bacon and drizzle with balsamic glaze. If making the aioli finish by drizzling overtop of nachos.
Sweet & Spicy Aoili
- If making the aioli, in a small bowl, combine mayonnaise, Calabrian chiles and honey and mix well. Set aside.
- If making the aioli, finish by drizzling overtop of nachos.
Nacho Build
- Preheat oven to broil. Evenly distribute all sweet potato chips on a parchment lined sheet tray. Top with mild cheddar cheese and bake until cheese is melted, about 2-3 minutes. Remove from oven and cool slightly.
