Dipping Sauce (optional)
Directions
- Preheat oven to 400°F. Line 2 baking sheets with parchment.
- In a skillet over medium heat, melt butter. Add leeks and sauté until translucent. Add apples and cook until softened. Stir in brandy, sage and nutmeg until liquid has evaporated. Remove from heat and season with salt and pepper. Cool completely.
- Remove bratwurst from casing into a large bowl. Add cooled apple mixture and fold into sausage until evenly distributed.
- Divide each puff pastry in half lengthwise and roll out slightly. Evenly divide sausage mixture between puff pastry and form into a log along the long edge of the dough, leaving about 1-inch of dough exposed on one side, there will be more on the other. Fold puff pastry over onto the 1-inch exposed side to encase the sausage. Use a fork to seal edges together.
- Divide each log into 8 sections and arrange pieces on the lined baking sheets 2-inches apart. Thin beaten egg with a small amount of water and whisk to combine. Brush each piece of puff pastry with egg wash. Sprinkle with sesame seeds if desired.
- Bake until sausage reaches an internal temperature of 160°F and puff pastry is golden brown, about 15-20 minutes.
- If desired, while rolls are baking, combine mayonnaise, mustard, and honey.
- Serve warm sausage rolls with dipping sauce if desired.
