Directions
- Preheat oven to 350°F. Prepare a rimmed baking sheet with aluminum foil or parchment.
- In a bowl combine ground pork, zucchini, carrots, onion, garlic, egg, breadcrumbs, salt, and pepper. Mix until ingredients are evenly distributed.
- Form pork mixture into a loaf in the center of the prepared baking sheet. Wrap half slices of bacon around loaf, tucking ends of each slice underneath, until loaf is fully wrapped in bacon.
- Bake in preheated oven for 45 minutes. While loaf is baking, whisk together ketchup, brown sugar, and Worcestershire.
- After 45 minutes remove pork from oven and brush all over with ketchup mixture.
- Return to oven and bake until the loaf reaches an intern temperature of 160°F, about 10-15 more minutes. Remove from oven and allow to cool 5-10 minutes before slicing.
- Serve meatloaf with desired sides such as mashed potatoes and steamed vegetables.
NOTE:
- To remove liquid from grated zucchini, place in a clean tea towel and squeeze out as much liquid as possible.
