Directions
Brine
- Mix the orange juice, soy sauce, and salt. Marinate the pork in the fridge for 2 hours.
Glaze
- Simmer all glaze ingredients in a saucepan for 8–10 minutes until the mango softens. Blend until smooth and set aside.
Grill
- Preheat your grill or pan to medium-high. Coat the pork in olive oil, salt, and pepper. Grill the sausages until charred (~10 mins) and the pork until it reaches 145°F (~15–20 mins). Brush the pork with glaze during the last minute. Let the meats rest for 10 minutes.
Slaw
- In a large bowl, toss the cabbage, chopped orange, lime juice, olive oil, cilantro, salt, pepper, and toasted coconut.
To Serve
- Slice the rested pork thinly and cut the sausage into bite-sized rounds. Lightly toast the slider buns. Layer the bottom buns with a scoop of citrus slaw, followed by slices of pork and a few pieces of sausage. Drizzle generously with the mango glaze and cap with the top buns.
*Whole muscle pork cuts are safe to eat when cooked to 145 degrees and allowed to rest for 3 minutes.
