Smoked Paprika Pork Stuffed Peppers

Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.

Directions

  • For more tender peppers, blanch in boiling water for 5 minutes. Drain and cool completely.
  • In a large skillet, heat olive oil over medium-high heat. Add pork and cook, stirring to break up meat, until no longer pink and cooked through, about 5-7 minutes. Add onions and garlic, and stir until fragrant.
  • Add smoked tomato paste and paprika. Continue to cook until darkened in color, about 2-3 minutes. Remove from heat.
  • Stir in cooked rice, diced tomatoes, almonds and olives until all ingredients are evenly distributed. Season with salt and pepper to taste.
  • Divide filling evenly between the four bell peppers. Top with cheese if desired.
  • Preheat air fryer to 400° F for 3-5 minutes. Place stuffed peppers into air fryer and cook until they reach an internal temperature of 160° F, about 12-15 minutes. (Could also be baked in an oven at 400° F for 20-25 minutes.)
  • Allow to cool for 5 minutes before serving.

NOTE: Can be made into bite-size version by substituting bell peppers with mini bell peppers. This would reduce cooking time to 8-10 minutes.
