Mini Pork Schnitzel Sliders

Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.

Directions

Prep the Pork:

  • If needed, pound the pork slices between plastic wrap to 1/4-inch thickness for even cooking. Season both sides of each piece with salt and pepper.

Breading Setup: In three shallow bowls: ​

  • ​Bowl 1: flour ​
  • Bowl 2: beaten eggs ​
  • Bowl 3: breadcrumbs + paprika + garlic powder + cayenne ​
  • Dredge each pork piece in flour, dip in egg, then coat thoroughly in breadcrumb mixture. ​

Cook the Schnitzel:

  • In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat.
  • Fry the schnitzels in batches, 2–3 minutes per side, until golden brown and internal temperature reaches 145°F.
  • Transfer to a paper towel-lined plate and rest 3 minutes. ​

Toast the Buns (optional):

  • Lightly butter and toast the slider buns in a skillet or oven until golden. ​

Assemble the Sliders:

  • Spread mayo and/or mustard on buns. Layer with lettuce, tomato/pickle, and pork schnitzel. ​
  • Optional: squeeze fresh lemon juice on the pork before topping with the bun.

Whole muscle pork cuts are safe to eat when cooked to 145 degrees and allowed to rest for 3 minutes
